I don't remember if there is the hand clapping scene in it, but maybe "Unforgiven"?

And just as a side note there's also a scene in "The Magnificent Seven" where Yul Brynner tries out Horst Buchholz  to see how fast he is with a gun by clapping his hands together but the movie you're thinking of is definitely "Rio Bravo."
Pretty sure it is a newer production
Well Howard Hawks , the director of "Rio Bravo" remade the film again 6 years later and called that version of it "El Dorado. " The remake starred John Wayne (again)and Robert Mitchum.  http://www.imdb.com/title/tt0061619

Then John Carpenter came along in 1976, changed the setting and era completely and remade the movie as "Assault on Precinct 13" http://www.imdb.com/title/tt0074156 and that movie was remade again in 2005 with Lawrence Fishburne and Ethan Hawke http://www.imdb.com/title/tt0398712

If it's not any of these then it must be another movie completely.
could be a movie with John Wayne  in it Dean Martin played a drunk gun fighter until he got sober also there is another one like it with Robert Mitchum  in it. I think John Wayne is in it also. Rickey Nelson played a gunslinger named Colorado in one of those two. I hope this helps. cec
