Child's movie from the year 2000, with a stuffed horse and purple and blue elephants.

It was a child's cartoon movie made back around the 2000's. The main character may be a stuffed horse. There were elephants colored purple and blue that may have lived in a library, or something like it. There is a scene in the movie where the characters were on a roller coaster or a minecart trying to rescue their friend. At the end of the movie they sing a song and the elephants keep shouting "CAKE".

Maybe "Mumfie"? They made some movies of the eps. This link has a good description of it.
Just a guess but if stuffed horse was Eeyore and the blue and purple elephants were heffalumps it could be Winnie The Pooh.
